  textproc/ripgrep: fix fake install paths

Use the fake-adjusted PREFIX in post-install so the staged rg binary is stripped and used in place instead of constructing a doubled STAGEDIR path. Keep upstream tests out of the ports checkout temp tree so Git discovery tests are not affected by /usr/mports.
