  games/libretro: avoid doubled fake prefix

Three libretro ports failed in Magus run 641 because do-install added FAKE_DESTDIR to an already fake-adjusted PREFIX, producing a doubled staging path and missing plist entries. Use PREFIX directly for the libretro install directories.
