  deskutils/gnome-clocks: update to 51.0 (#1272)

Updates GNOME Clocks to 51.0 and removes the stale USE_LDCONFIG flag;
the port installs no shared object.

Validation:
- bmake makesum, patch, build, fake, package
- bmake test: 3/3 passed (desktop, GSettings schema, AppStream metadata)
- bmake check-license
- git diff --check

portlint reports only inherited style advisories plus generated
work/package artifacts retained for this validation.

configuration.
